Paula Swanzie Elliott grew upon a sugar cane farm in KZN and was trained at Silwood School of Cookery in Cape Town. She finished her three years with a Grande diploma in Cordon Bleu cooking.
Since then she has worked in all spheres of the food industry across the world. Corporate catering in London was followed by Fine dining French cuisine at a world renowned restaurant in British Columbia, Canada. Since 2008 she has worked for 2 months of the year at a remote but exclusive Salmon Fishing Lodge in the Northern most parts of Russia – way up in the Arctic Circle!
Paula currently lives in Durban where she works as a freelance chef doing private functions and corporate events under her company Swanzie Catering. In her spare time she loves a good trashy book on a warm couch. She also has an immeasurable love of animals.
